What does rosemary chicken taste like?

This meal prep chicken dinner tastes like a cross between roasted Thanksgiving turkey and Greek chicken.

This rosemary chicken has minimal seasonings so it's just about as easy as turning to your spice drawer and adding rosemary, garlic, salt & pepper to some chicken and veggies. Meal prep can't get any easier than this!

The aroma of rosemary is a bit like lemon tea, with a woodsy, piney taste. It's a powerful herb, so a little goes a long way, but it's flavourful and delicious!

You can use fresh rosemary or dry rosemary in this recipe, and if you do decide to choose fresh rosemary for a more powerful burst of flavour, you can rest easy knowing that fresh rosemary lasts in the fridge up to 2 weeks – more than enough time to make this rosemary chicken again and add a fun garnish to new dishes in that time too!

Making dinner on a busy night doesn't get much easier than Sheet Pan Rosemary Chicken! There are just a few simple steps required to make the recipe.

First, you'll need to chop some fresh veggies: I used cauliflower, red onion, red bell pepper, and brussels sprouts. If you want to swap any of these out for different veggies, go for it. Broccoli, carrots, and sweet potatoes are great substitutions. Try to use firm vegetables, as softer veggies are likely to overcook, and nobody likes mushy veggies.

If you're the type of person who likes to shop for groceries, then spend an hour right away to chop, slice, and dice the ingredients, you're a rock star! Prepping ingredients for recipes that you'll make during the week will save you SO much time, and you'll be ahead of the game.

After the veggies are prepped, you'll mix together a simple 4-ingredient, tangy lemon marinade. You'll use it to season the veggies and boneless skinless chicken breasts.

Season everything, place it onto a sheet pan, and into the oven it goes! Just wait for everything to cool down, then portion it into meal prep containers, label them, and pop them into the fridge. I wouldn't recommend freezing this particular recipe because the veggies may get soggy, but you could definitely freeze the raw chicken in the marinade to save some time when you're prepping this meal for the future.

Like I've said before, meal prepping saves time. That's never a bad thing, especially during busy weeks, am I right?

Instructions
  1. Preheat oven to 450 F.
  2. Add olive oil, lemon juice, garlic, rosemary, salt and pepper to a small bowl and mix to combine.
  3. Add chicken and veggies to a parchment-lined sheet pan. Drizzle olive oil-lemon juice mixture overtop, rubbing it over chicken and tossing veggies.
  4. Bake for 15-20 minutes, flipping chicken and stirring veggies halfway through, until chicken is fully cooked. Time will depend on the size of breasts - the smaller the breast, the lower the cook time. I always check at the 15 minute mark before adding more time.
  5. Serve and enjoy!
